USA Pear Crisp!!

As you know, Olivia is totally OBSESSED with Pears! The holidays are the perfect time to cook with pears, after all, Partridges hang out in pear trees right?!
Check out this yummy Pear Crisp recipe from our friends at USA Pears. Test it out and let us know what you think!

Ingredients:
 
Streusel Topping:

1 cup old fashioned rolled oats
⅓ cup brown sugar
½ cup all-purpose flour
½ teaspoon kosher salt
¼ cup (4 tablespoons) unsalted butter, cold, cut in small pieces

 

Pear Filling:
8 large USA Pears (such as Concorde, Bosc, or Red or Green Anjou), peeled, cored, and cut in large dice (about 8 cups)
2 tablespoons granulated sugar
2 tablespoons cornstarch
1 Lemon Juiced ( About 3 T)

Directions:

Preheat the oven to 350 degrees.
Butter an 8 x 8-inch baking pan, or lightly coat it with pan spray.

For streusel: Measure the rolled oats, brown sugar, flour, and salt into a bowl. Add the butter pieces and use a fork, pastry cutter, or your fingers to incorporate the butter until the pieces are no larger than the size of peas. Set aside.




For filling: In a large bowl, mix the pears, lemon juice, granulated sugar, and cornstarch. Let the mixture sit for 10 to 15 minutes, until the pears begin to give up some of their moisture and the sugar dissolves.
Pour the pear mixture into the buttered baking dish and sprinkle the streusel evenly over the top.
Next, place the pear mixture into the baking dish and sprinkle the oat mixture evenly over the top. Bake in the middle of the preheated oven for 50 minutes to an hour, until the topping is golden brown and the fruit below is bubbly. Allow the crisp to cool for 20 to 30 minutes before serving.

Fresh Strawberry Crepes


What You'll Need:

1/4 cup nonfat cottage cheese
2 Tbls. plain oatmeal
6 egg whites
vanilla to taste
packet of splenda
cinnamon if you want
2 c fresh strawberries

Blend in a blender for 30 secs. This makes two cups of batter.

Spray small skillet or pan with cooking spray.

Put in 1/3 c. in pan at a time. When you add the crepe swirl it around in the pan to coat evenly.

Very carefully, flip and cook on other side.

Wash and slice the strawberries, fill crepes and fold over.

Add a sprinkle of powdered sugar for decoration and enjoy!

Heavely Grilled Pizza

As promised, here is the recipe for the pizza we whipped up for dinner last night!

Ingredients:
Naan Bread (Garlic)
Prosciutto, thinly sliced
Caramelized Onions
Arugula
Fresh Mozzarella 
Balsamic Vinegar
Fig Preserves (optional)
Olive Oil
Lemon Juice
Salt and Pepper

Preheat over to 350*

How to make it:
Start by spraying the Naan bread with cooking spray or brushing it with olive oil

Grill the Naan on a grill or cast iron grill pan... or even a panini press if you have one! Once you have the grill lines on the bread, remove from heat.

Cook sliced onions on a low heat with a little salt and pepper until they are translucent and have a brown color to them

Slice mozzarella and prosciutto and place on the grilled Naan

Top with the caramelized onions and place in oven for about 7 minutes (for the cheese to melt)

In a small bowl, toss arugula with olive oil, a squeeze of lemon juice and salt and pepper

Take the pizza out of the oven and top with arugula.

In a small saucepan heat balsamic vinegar on a low heat, mix in fig preserves (or any other yummy preserve) and drizzle over the pizza.

We recommend you make extra of the balsamic... You'll want to save it for other dishes!

Fan Featured Recipe: Live Lean Carne Asada!

We are so excited to announce that Live Lean will be helping the SIU Girls with their fitness routines that we couldn't resist posting another one of their amazing recipes!



Here is the recipe for Carne Asada:
3 lbs flank steak

½ cup orange juice

½ cup limejuice

½ cup soy sauce

½ cup extra virgin olive oil

6 cloves garlic, minced

1 cup fresh cilantro, chopped

1 jalapeno, chopped

2 Tbs chili powder

2 Tbs cumin

1 Tbs paprika

1 Tbs oregano

1 Tbs red pepper flakes



Pound steak with a meat mallet until ¼ inch thick. Then take a fork and stab the steak all over, this will allow the marinade to soak into the meat.
Mix remaining ingredients together and combine with steak into large Ziploc bag.
Place in fridge to marinate 8-12 hours. Be sure to turn the steak frequently and massage marinade into the meat.
When you’re ready to cook you can throw it on the grill or bake it. We prefer grilled, medium rare is our favorite way to serve this dish.


This is a fantastic dish on it’s own or you can serve with sautéed bell peppers and onion as tacos. Be sure to use Greek yogurt in place of sour cream! Enjoy =]
